Oats Masala Omelette

Show me a ten year old who gets super excited about having a big bowl of porridge for breakfast.

Ah well, you won’t find him in my house at least. So like all sneaky mums, I go fancy-dressing food to look like they’re something else.

This is one heck of a costume too. Do give it a whirl.

Ingredients

1 cup instant/quick cooking oats

1 big onion, chopped fine

2 green/red chilies chopped

1/2 tsp Cumin seeds

A pinch or two of Carom seeds/Ajwain

1 tsp chilli powder (yes, it’s no fun if it’s not spicy)

1 tsp coriander powder

1/4 tsp turmeric powder

1 tsp chicken/meat masala (nope, it does not contain ground up chicken!)

a pinch of garam masala

a bunch of coriander leaves, chopped

3/4th tsp Himalayan salt (as per taste)

3/4th cup water

Cooking Oil (coconut or any vegetable oil is fine)

Fry the chopped onions and chillies in 1tbsp oil until they are nicely browned.

In a mixing bowl add in the oats, water, the powders and all the rest of the ingredients. Mix, then add the fried onions and chillies. Remix! Adjust the water so the consistency is like that of idli batter, thick and not too runny.

In the same pan, add a teaspoon of oil, spread it around and place a ladleful of batter in the centre. Spread gently with a flat spoon (NOT like you do dosas). Let it cook slowly for a few minutes on medium heat. Since it’s oats, it needs to be slow cooked till brown and slightly crisp on the edges or it’s going to break. Also, make sure you use a big pan so there’s enough room to flip it carefully. Turn over and cook the other side. And it’s done!
